I think demolitions is too thought of as explosives these days, and I doubt they had much gunpowder to use in wars back then, so wouldn't Trajectory master or something be more fitting?

They did have explosives, gunpowder was used in the High Middle Ages, but I agree that Siege Engineering, Siege weaponry/engine training or whatever else might be a better term.

Demolitions simply comes from demolish, which could be in reference to generic siege weaponry or catapults...
